Brandy and blue cheese add a luxe touch to this quick-cooked steak dish making it perfect party fodder
Serves: 8
Ingredients:
1 medium beef fillet
60ml (¼ cup) olive oil
Salt and pepper
Sholegrain mustard
30ml (2 tbsp) butter
125g gorgonzola or other blue cheese, crumbled
125ml (½ cup) cream
30ml (2 tbsp) brandy, heated
Freshly chopped parsley, to serve
Method:
1) Slice the fillet into 8 portions and brush each slice on both sides with half the oil. Season and spread with mustard on both sides.
2) Heat the remaining oil and butter in a heavy-based pan and fry the steaks for about 3-5 minutes per side (for medium rare). Set aside to rest.
3) Add the crumbled cheese and cream to the pan and stir until the cheese has melted. Add the warmed brandy and ignite. Once the flames cease, pour the sauce over the steaks and garnish with parsley.
