Amp up the flavour of a simple side of grilled asparagus with this French mayonnaise-like sauce that's made with hard-boiled eggs
Sauce:
45ml (3 tbsp) olive oil
15ml (1 tbsp) white wine vinegar
5ml (1 tsp) Dijon mustard
1 hard-boiled egg, finely chopped
10ml (2 tsp) capers, chopped
5ml (1 tsp) chopped fresh parsley
Salt and pepper
Other ingredients:
1 large bunch asparagus, washed and trimmed
Olive oil
Coarse salt
Method:
1) Combine all the ingredients for the sauce and set aside.
2) Brush asparagus with olive oil and sprinkle lightly with coarse salt. Preheat a griddle pan and grill the asparagus till tender.
3) Serve hot with sauce on the side.
