RECIPE: Fish roasted in Parma ham

Justine Drake, host of TV's 'Just Cooking', shares one of her quick and easy recipes

Serves: 4
Ingredients:
4 sustainable white fish fillets
Juice of 1 lemon
Salt and milled pepper
4 slices Black Forest or Parma Ham (or use slices of smoked beef)
Olive oil
Method:
1. Preheat oven to 220°C.
2. Drizzle fish with lemon juice and season well. 
3. Wrap each fillet with meat, leaving ends exposed.
4. Place on a baking tray and drizzle with olive oil.
5. Bake for 8 - 10 minutes, depending on thickness of the fish.
