RECIPE: Chocolate Naartjie Truffles

These truffles may just be the most luxurious - and easiest - edible homemade gift you can make

Makes: 45
Ingredients:
½ cup (125ml) cream
500g of 55% semi-sweet chocolate, finely chopped
50ml naartjie or orange liqueur, optional
2 naartjies, zest finely grated (you could replace with oranges)
Method:
1. Start by making a ganache. Place the cream in a small saucepan over high heat and bring to the boil.
2. Place the chocolate in a medium bowl and pour the cream over. Using a spatula, stir until the mixture is smooth. (If the ganache looks oily, whisk in 1 teaspoon (5ml) of boiling hot water at a time until the ganache is smooth and glossy.)
3. Stir in liqueur, if using, and refrigerate for 2-3 hours or until the ganache is completely firm.
4. Place the finely grated zest on a small piece of baking paper. Place the zest in the microwave for 15-second bursts until the zest has dried out.
5. Scoop out teaspoonfuls of the ganache and roll into balls, then roll the truffles in the dried zest.
6. Store in an airtight container for 2-3 days. To extend the shelf life, coat each truffle in melted chocolate, if desired...
