RECIPE | Lamb patties with hummus & tzatziki in mini pita breads

Delicious as a light dinner, these lamb pattie pitas also go down well at parties. Serve them with tzatziki and hummus for an authentic Greek bite

Makes: 10

Ingredients:

500g lamb mince

1 small red onion, finely chopped

15ml (1 tbsp) ready-made basil pesto

45ml (3 tbsp) chopped fresh mint

Salt and pepper

1 large egg, lightly beaten

Olive oil, for frying

10 mini pita breads

1 tub ready-made hummus

1 tub ready-made tzatziki

Method:

1) Combine the mince, onion, pesto and mint, mix well and season. Add the egg and mix until well combined.

2) Roll the mince mixture into 10 balls (this is easier if you wet your hands). Flatten the balls slightly to form patties

3) Fry on both sides in a little hot olive oil until cooked to your liking.

4) Serve the patties in the mini pita breads with dollops of hummus and tzatziki, with trimmings and salad if desired.
