Makes: 24

Difficulty: Easy, 30 minutes to make

Ingredients:

6 large eggs

6 large egg yolks

170ml milk

170ml fresh cream

Salt and freshly ground black pepper, to taste

3 baby marrows, thinly sliced and blanched

100g grated cheddar cheese

Method:

  1. Preheat the oven to 190°C and lightly spray a 24-cup muffin pan with non-stick spray.
  2. Whisk eggs, yolks, milk, cream and seasoning together.
  3. Place a tablespoonful of baby marrow into each muffin cup and pour over the egg mixture until 3/4 full and top with the cheese.
  4.  Bake until the tops are puffed and just golden, about 10 minutes. Leave to cool on a wire rack, then turn out and serve.
