Seasoned with a simple homemade spice rub, these baked chicken wings would go down a treat with a cold beer
Serves: 4-6
Difficulty: Easy, 45 minutes
Spice rub:
20ml (4 tsp) ground smoked paprika
15ml (1 tbsp) store-bought chicken spice rub with herbs
15ml (1 tbsp) garlic flakes
15ml (1 tbsp) brown sugar
15ml (1 tbsp) sea salt flakes
15ml (1 tbsp) finely grated lime rind
10ml (2 tsp) ground paprika
10ml (2 tsp) ras el hanout spice blend (or use 5ml (1 tsp) chilli flakes)
2.5ml (½ tsp) ground black pepper
Other ingredients:
12 free-range chicken wings
30ml (2 tbsp) olive oil
Lime wedges, to serve
Method:
1) Preheat the oven to 180°C.
2) Combine all the spice rub ingredients and mix well. Rub the chicken wings with the olive oil and place in a plastic bag with 60ml (4 tbsp) of the spice rub. Close the bag and shake to coat well.
3) Place the wings on a wire rack set above a baking tray covered with foil and roast for 30 minutes. Remove the foil and bake for a further 10 minutes until golden and cooked through.
4) Sprinkle with the extra rub and serve with lime wedges.
