Using an espresso mug as a mould, give your dessert a clever twist with this easy homemade ice cream on a stick

Serves: 10

Difficulty: Very easy

Time: 15 mins + freezing time

Ingredients:

1-litre double thick yoghurt

250ml (1 cup) full-cream milk

375g mixed frozen berries, puréed

300g icing sugar

Wooden ice-cream sticks

Method:

1) Place the yoghurt in a mixing bowl and stir in the milk.

2) Blend the puréed berries into the yoghurt and add the icing sugar.

3) Test for sweetness and add more icing sugar if needed.

4) Divide the mixture between 10 espresso mugs and place in the freezer until semi-frozen - this should take about 2-3 hours.

5) Insert the ice-cream sticks into the centre of the mugs and place in the freezer until the lollies are fully frozen.

6) To serve, dip each mug very quickly into hot water until the lollies can be easily removed.
