RECIPE: Jam doughnuts

Golden nuggets of deep-fried dough with a gooey fruit filling - what's not to love?

Makes: 18
Ingredients:
60g butter, melted
75ml lukewarm water
250ml (1 cup) lukewarm milk
50g (¼ cup) caster sugar
5ml salt
2 eggs, lightly beaten
5ml (1 tsp) vanilla extract
500g flour, sifted
1 sachet instant yeast
Oil for deep frying
125ml (½ cup) smooth apricot or strawberry jam
Caster sugar
Method:
1) Using an electric mixer, whisk the butter, water, milk, caster sugar, salt, eggs and vanilla to combine.
2) Combine the cake flour and yeast, add to the wet mixture and mix to a soft dough. If the mixture is too dry, add extra lukewarm water.
3) Knead the dough on a lightly floured surface for 5 minutes.
4) Place in a lightly greased bowl, cover with plastic wrap and allow to rise for 40 minutes.
5) Knock down the dough, divide into 18 equal pieces and roll each piece into a ball. Place on an oiled tray and allow to rise, covered for 5 minutes.
6) Preheat the oil in a pan and fry 3-4 doughnuts at a time, turning until golden brown on both sides. Drain on paper towel.
7) Place the jam in a piping bag with a straight metal nozzle and whilst doughnuts are still warm place a doughnut in one hand, ease the nozzle into the centre of the doughnut and squeeze some jam into the centre, then roll in caster sugar...
