TIP: This recipe will also work for lamb chops, but grill for about 6-8 minutes per side.
- 6 kassler chops (or thick slices of leftover ham)
Glaze:
- 45ml (3 tbsp) orange marmalade
- 10ml (2 tsp) wholegrain mustard
- 15ml (1 tbsp) brown sugar
- Zest and juice of 1 orange
Salsa:
- 1 large mango, peeled and cubed (or pineapple or peach)
- 2 spring onions, finely sliced
- Zest and juice of 1 lime or lemon
- 1 small red chilli, finely sliced
- Handful fresh coriander, finely chopped
Arrange the kassler chops or ham slices on a baking tray. Combine all the glaze ingredients in a saucepan and cook over low heat until the orange zest has softened and the sugar has dissolved.
Brush the chops or ham slices generously with the glaze. Place under a preheated oven grill and cook for 5 minutes per side for chops; 2-3 minutes per side for ham slices. Brush with extra glaze after turning.
Combine all the salsa ingredients and toss. Serve the kassler chops or ham with salsa and vegetables of your choice. Serves 4
