RECIPE: Greek-style lamb kofta burgers

For an exotic take on a hamburger, spice up some lamb mince, shape it into patties and grill it on skewers over the coals

Makes: 8

Ingredients:

1kg lamb mince

1 onion, finely chopped

2 cloves garlic, crushed

2.5ml (½ tsp) ground cloves

2.5ml (½ tsp) ground nutmeg

2.5ml (½ tsp) paprika

5ml (1 tsp) ground cumin

5ml (1 tsp) ground coriander

Zest and juice of 1 lemon

125ml (½ cup) fresh flat-leaf parsley, finely chopped

1 extra-large egg, beaten

Salt and freshly ground black pepper

8 burger rolls, to serve

Method:

1) Place all patty ingredients in a large bowl and mix well.

2) With wet hands, shape into balls and thread onto soaked wooden skewers, or flatten into patties.

3) Braai according to your preference.

4) Serve on rolls with pickled vegetables and hummus or tzatziki, and trimmings of your choice.
