RECIPE: Banting-friendly smoky fish pie

Chef Jonno Proudfoot's LCHF recipe for creamy hake-and-haddock pie topped with cheesy cauliflower mash

Ingredients:
250g butter
1 onion, finely chopped
2 sticks celery, finely chopped
2 leeks, thinly sliced and rinsed
Salt and freshly ground black pepper
2 heads of cauliflower
3 large eggs
250ml (1 cup) cream
2 tbsp Dijon mustard
3 handfuls of English spinach
250ml (1 cup) grated mature cheddar cheese
1 lemon juice and zest
800g hake fillet or any other white fish, cut into 3cm-4cm chunks
800g haddock fillets, cut into 3cm-4cm chunks
