RECIPE: Red cabbage, apple & blueberry salad

This colourful coleslaw is best served slightly chilled

Serves: 6
Difficulty: Easy
Ingredients:
60ml (4 tbsp) olive oil
45ml (3 tbsp) cider vinegar
Pinch of sugar
5ml (1 tsp) mustard powder
Salt and freshly ground black pepper
1 medium red cabbage, shredded
2 large apples, cored, peeled, if desired, and sliced thinly
375ml ( 1 ½ cups) fresh blueberries
Finely grated zest of 1 lemon
Method:
1. Whisk together the oil, vinegar, sugar, mustard powder and a generous pinch of salt and pepper in a large mixing bowl.
2. Add cabbage, apple slices, blueberries and lemon zest, tossing well to coat.
3. Cover and chill for at least 15 minutes before serving...
