These burger gurus have the question we've all been needing an answer to. What is the secret to a good hamburger? A French restaurant that specialises in hamburgers? "Why not," said Michel Morand, owner of Bistro Michel in Joburg. "South Africans love meat and they love hamburgers." He said that in Paris hamburgers were very in, in keeping with the worldwide trend to eat simpler food.story_article_left1Morand, with his stepson/chef Brian Burghartswieser, have been churning out yummy burgers for a couple of months now. "The classic is our most popular," said Morand. "Our burgers are very juicy - a 200g pure beef patty served with homemade onion marmalade and homemade tomato ketchup (he's not sharing that recipe) on the side and a helping of chips."Burghartswieser recently returned after training in the same kitchen in France as his stepfather did and spending a couple of years working in different restaurants in London.The secret to a good hamburger? Burghartswieser believes it is toasting the hamburger rolls in ghee (clarified butter), which gives them good flavour. And the roll must be crisp on the outside and soft inside.
