RECIPE: Pork chops with roast plums

Make the best out of a seasonal plums with this easy grilled pork chop recipe

Serves: 4
Prep and cooking time: 50 minutes
Ingredients:
600g dark plums, halved, stones removed
2 medium red onions, cut into eighths
4 cloves of garlic, bruised
125ml (½ cup) shao hsing (Chinese cooking wine) or dry sherry
5ml (1 tsp) Chinese five-spice powder
60ml (4 tbsp) golden or maple syrup
4-6 pork chops, fat trimmed
15ml (1 tbsp) extra virgin olive oil
Salt and freshly ground black pepper
To serve:
Steamed Asian greens
Method:
1. Preheat oven to 180ºC.
2. Place plums, onion and garlic in a roasting dish lined with baking paper.
3. Combine wine and spice and pour over the plums. Roast for 40 minutes. Transfer to a serving dish and drizzle with the syrup.
4. Preheat the grill or griddle pan until smoking hot.
5. Rub chops with olive oil and season.
6. Cook for 5 minutes on each side, depending on thickness.
7. Serve with plum mixture and steamed greens...
